The shortcrust pastry

- Knead the mixture 3 or 4 times, pressing it on the work surface and pulling it with the palm of your hand, to incorporate the butter well into the flour.
- Shape it into a ball and put it in the fridge wrapped in cling film for 30 minutes. Take out the dough 15 minutes before rolling it out.
