For the base: Mix the flour, sugar and lemon zest together and finally add the melted butter. Press everything into the pan and cook for three minutes at 80% oven power. Make sure the base is firm and if not, cook for another 30 seconds.
For the filling: Whisk the sugar, lemon zest, eggs and lemon juice together. Add the flour, baking powder and salt and continue beating for 2-3 minutes. Pour the filling over the base and cook in the microwave for three minutes at 80% power. Check that the consistency is similar to that of a jelly, if not, try another minute of cooking. Let it cool down and put it in the fridge for a few hours if not overnight. Cut into squares, sprinkle with powdered sugar and, if necessary, sprinkle with a little lemon zest.
