Castagnole: the recipe to prepare them
The main ingredients are eggs, flour, sugar, butter and yeast, which allows the dough to swell. The origins of this dessert seem to date back to the 18th century.
Below you will find the recipe for making them. They are excellent enjoyed warm or at room temperature.
Ingrediants:
500 gr flour 00
100 gr butter at room temperature
100 gr sugar
25 gr baking powder
10 gr salt
5 medium eggs
zest of 1/2 lemon

Preparation:
Mix all the ingredients together, forming a large ball of dough.
Heat a pan with oil: the temperature must not be very high, otherwise the damselfish darken too much outside and remain raw inside.
Take small doses of dough, make some cords and cut small balls (about 2-3 cm). Dip 4-5 damselfish at a time in the hot oil.
Place them on a tray with kitchen paper and, once warm, sprinkle them with powdered sugar. Serve at room temperature.
