All the tips for not throwing away vegetable scraps

How many times have we left some vegetables because we made too much of them, because we didn't like them or because all of a sudden the plans changed. So what to do with them? There are various ways to recycle vegetables in the kitchen.

Here are some examples:

Vegetable meatballs

The easiest way to use vegetable leftovers is to make meatballs. Just chop everything, add minced meat, eggs, parmesan, salt and pepper, then cook them in a pan in extra virgin olive oil.
You can also get tasty burgers with the same dough but without Parmesan, you can serve them as a snack in stuffed sandwiches by adding tomato slices and a salad leaf, adding homemade mayonnaise with an egg, salt and a glass of seed oil, for a light mayonnaise add the Greek yogurt.
Younger people will love it and eat a healthier burger than they would eat at fast food restaurants.

Souffle

Pass the cooked vegetables in the mixer, and blend everything. Add bechamel, eggs, grated Parmesan to taste, season with salt and pepper.
Whip the egg yolks and combine them gently.
Pour the mixture into a greased pan and bake in the oven at 160 degrees.

Meatballs and hamburgers can also be made without meat, but using only vegetables, eggs, cheese, salt and pepper.

If you have puff pastry at home, you can recycle the vegetables by making a savory pie.
Cut the vegetables into small pieces, add an egg, some spreadable cheese, parmesan, salt and pepper, parsley.
Roll out a circle of puff pastry in a round pan with the edges coming out of the pan itself, pour the filling over the puff pastry circle, roll it out and cover with another circle of puff pastry, carefully close the edge, make holes with a fork over the entire surface and bake at 180 degrees for 20 minutes.

Another way to recycle vegetables is to make a tasty soup, the more variety there will be, the tastier it will be.
If you prefer, you can pass it with an immersion blender to make a puree or vegetable cream, adding a drizzle of extra virgin olive oil at the end of cooking and two leaves of mint.

Of course yes, even fruit and vegetable waste can be recycled in several ways.
For example, banana peels are an excellent fertilizer for roses, just cut them into small pieces and mix them with the earth, or even better, pass them in a blender adding a little water and then distribute it.

The skins of potatoes and carrots can be fried or dried in the oven until you get excellent chips.

The scraps of basil, parsley, leeks, fennel, the pods of peas, minced and seasoned, are transformed into delicious sauces.
