Roman-style artichokes: the traditional recipe

Roman-style artichokes are a typical side dish of the Lazio region, whose main ingredients, in addition to the artichokes, are garlic and mint. Ideal to use are artichokes or violets (you see in the picture), but if you want - although not suitable for the traditional recipe - you can also use common artichokes, easier to find throughout Italy.

The most laborious part of the recipe is the cleaning and peeling of the artichokes, but once you get the hang of it (watch out for the thorns!), It will become a really easy preparation.
We propose below the typical recipe to prepare this side dish, delicious either alone, perhaps with a few slices of toast to collect the sauce that will be created during cooking, or as a side dish to a meat or fish dish.

10 Roman artichokes
5 cloves of garlic
1-2 lemons
mint romna
salt and pepper
extra virgin olive oil
